Recipes for Overripe Bananas

I’m no dietitian, so there there are no specific calories, or grams of macro nutrients provided (not even full instructions!). I just hate wasting food – and I love these recipes! -Yvette

 

Easy Smoothie:

Prep: Cut up and freeze separately on a baking sheet for 20-30 minutes.  Then put in a container.  This helps keep them from sticking together.

  • 1 banana
  • 1 cup Strawberries (frozen or fresh)
  • 1 C (or handful) of frozen spinach or kale
  • 1 scoop of your favorite protein and/ or ½ C walnuts
  • 1 cup of your favorite liquid (OJ, Almond milk or green tea)
  • Blend and drink!

 

Chocolate Banana Ice Cream

  • 2-3 bananas (frozen)
  • 1-2 Table Spoons of Cocoa powder
  • Place in Vita mix or food processor, blend until smooth (like soft-serve ice cream) then serve

 

 

Grandma Malone’s Never Fail Banana Bread

  • 1 egg
  • 3 lg bananas
  • 1 C sugar ( I like to substitute ¾ C honey)
  • 1 ¾ C flour (my favorite is Bob’s Redmill  GF All purpose baking flour)
  • ½ tsp Pink Himalayan sea salt
  • ½ C nuts
  • ½ C oil (I usually use olive oil)
  • 1 tsp baking soda
  • 1tsp vanilla
  • Mix
  • Bake 375 50-60 minutes

 

Grain free pancakes

  • 3 bananas
  • 3 TBSP Almond Butter
  • 3 eggs
  • Mix and cook like regular pancakes.  They are a little heavy, yet sweet and  satisfying.  You decide if you need to add butter or syrup.  I usually eat them plain.
