Seasonal Eating with Summer’s Bounty

F.L.O.S.  One of the first concepts taught in the whole foods production class at Bastyr University.  It stands for Fresh, Local, Organic (if available), Seasonal.  We are fortunate to live in a beautiful, four-season area. Right now, we are entering into one of our most abundant seasons for fresh produce.

Why FLOS?
Choosing whole, fresh, locally (and organically) grown, and seasonal produce provides several benefits.

  1. Nutrient Density: Fresh produce, especially when consumed soon after harvest, tends to retain more nutrients compared to processed or imported varieties that may have been stored for longer periods.
  2. Flavor: Local and seasonal produce often tastes better because it’s picked at peak ripeness and doesn’t need to endure long transportation times.
  3. Supporting the Local Economy: Purchasing from local farmers supports the local economy and helps maintain farmland, preserving agricultural landscapes.
  4. Environmental Impact: Buying local food reduces the carbon footprint associated with transporting food long distances. Organic farming practices also minimize the use of synthetic pesticides and fertilizers, promoting soil health and biodiversity.
  5. Reduced Exposure to Chemicals: Organic produce is grown without synthetic pesticides and fertilizers, reducing exposure to potentially harmful chemicals.
  6. Seasonal Eating: Eating foods that are in season can provide a more diverse and balanced diet throughout the year, as different seasons offer different types of fruits and vegetables naturally suited to that time of year.

Summer Produce Guide
With advances in global transportation, summer fruits and vegetables are often seen year-round in our local grocery stores. They are shipped from either warmer climates with longer growing seasons or the southern hemisphere. By buying from local farms at the farmer’s markets or looking at the country of origin in the grocery store, you can make sure your produce is in season and local. How we help
The Zenergy Juice bar offers daily meals from local restaurants or made in-house that source and use locally grown produce.  You can also visit either the Ketchum or Hailey farmer’s markets during the summer season.  Local farms such as Squash Blossom and Kray’s Market Garden offer produce as well.  

The FLOS approach to choosing produce not only contributes to personal health but also supports environmental conservation, reduces carbon footprints associated with food production and transportation, and fosters a resilient and interconnected community centered around nutritious and environmentally responsible food choices.
