Healthy Recipe: Rainbow Salad

Just in time for spring: a quick and supercolorful salad that's as tasty as it is nutritious. The recipe? There isn't one exactly – just mix and match fresh fruits and veggies from all colors of the rainbow. Next, add your favorite protein. When you're done, drizzle with lemon olive oil or your favorite dressing. Voila! You have a visually pleasing and highly satisfying meal in a bowl.  

When possible, choose locally or regionally grown produce found at stores including NourishMe, Wood River Sustainability Center and Atkinsons' Market or through Idaho's Bounty or Kraay's Market Garden. It's not only fresh and filled with nutrients – it supports our local economy.

CHOOSE YOUR COLORS
Red: cherry tomatoes, red peppers, strawberries, raspberries
Orange: orange peppers, carrots, Clementine sections
Yellow: yellow peppers, mangoes, lemon juice
Green: mixed greens, spinach, kale, green peppers, kiwi
Blue/purple: purple cabbage, blueberries

ADD PROTEIN
Quinoa, chickpeas, chopped nuts, animal protein (chicken, beef, fish)

ADD DRESSING
